Method: Thread prawns, avocado cubes, red onion slices, and cherry tomato halves onto skewers. Arrange on a platter and serve with lime wedges for squeezing over.

Ingredients:

  • 200g couscous

  • 250ml hot vegetable stock

  • Juice and zest of 1 lemon

  • Small bunch of fresh parsley, chopped

  • Small bunch of fresh coriander, chopped

  • 1/2 cucumber, finely diced

  • 1/2 red bell pepper, finely diced

  • 1 tbsp olive oil

  • Salt and pepper to taste

Method: Place couscous in a heatproof bowl. Pour hot stock over it, cover, and let stand for 5 minutes until liquid is absorbed. Fluff with a fork. Stir in lemon juice, zest, herbs, cucumber, red pepper, and olive oil. Season to taste.

4. Caprese Skewers

An effortless classic that looks elegant and tastes divine. Ideal for picnics or garden parties.

Ingredients:

  • 250g small mozzarella balls (bocconcini or ciliegine)

  • 250g cherry tomatoes

  • Fresh basil leaves

  • Balsamic glaze for drizzling (optional)

  • Wooden skewers

Method: On each skewer, alternate threading a mozzarella ball, a basil leaf, and a cherry tomato. Repeat until skewers are full. Arrange on a serving platter and drizzle with balsamic glaze if desired.

5. Grilled Halloumi & Peach Salad

Ingredients:

  • 250g halloumi cheese, sliced into 1cm thick pieces

Method: Brush halloumi slices and peach halves with a little olive oil. Grill on a medium-hot griddle pan or BBQ for 2-3 minutes per side until golden and charred. Arrange salad leaves on plates, top with grilled halloumi and peaches. Whisk remaining olive oil and balsamic vinegar, drizzle over the salad, and sprinkle with chilli flakes if using.

Ingredients:

  • 200g digestive biscuits, crushed

  • 50g melted butter

  • 200g cream cheese, softened

  • 100ml double cream

  • 50g icing sugar

  • 1 tsp vanilla extract

  • Mixed berries (strawberries, raspberries, blueberries) for topping

Method: Mix crushed biscuits with melted butter and press into the bottom of 4-6 small jars or glasses. Chill for 10 minutes. In a separate bowl, whisk cream cheese, double cream, icing sugar, and vanilla extract until smooth and thick. Spoon the cream mixture over the biscuit base. Top generously with mixed berries.
